It’s time to get ready for a whole bunch of delicious cold recipes to enjoy by the sun and these pops will get you set!
Last summer I was in love with my ice cream maker. True story. I made batch after batch of sweet, sugary dairy-free goodness and thought I just couldn’t get enough. Cold weather set in and I put my frozen treat development on hold. And then I turned into a health nut and worked refined sugar out of my diet. With warm weather approaching, I’m still going to need to get my ice cream headache on, but I’m turning to healthier, plant-based popsicles instead.
My Blueberry Vanilla Pops couldn’t be easier to make. They’re creamy, flavorful, and totally refined sugar free. A combination of spinach, blueberries, and almond milk, they’re 100% good for you. Truthfully! Heck, you could even eat them for breakfast. And I probably will. They’re fruity and full of vanilla flavor and are sure to cool you off while keeping you healthy at the same time.
Note, not all protein powders are the same. Some may be sweetened, some not. I used a stevia sweetened one. If you’ve used your favorite vanilla powder in a smoothie before, try to gauge whether or not you’ll want to sweeten your pops based on how sweet your smoothie was. The powder I used (Very Vanilla from Vega One) is not especially sweet, which is why I added more stevia.
Combine all ingredients in a blender. I have a personal sized one made by Nutribullet. It pulverizes nearly everything and makes these pops really smooth and creamy. Blend until smooth and then pour into popsicle molds. If you have a bit of pop mix left, feel free to drink it. It’s yummy! Freeze for about 4 hours and then enjoy!
Makes 4 pops at 1/2 cup size each.
