Some days all we need is one easy recipe for a sweet treat and there’s no such a thing as too many vegan cookies recipes
Chocolate cookies is probably one of the most available recipes on line – and maybe also in cookbooks – but every time I want to bake some I find myself wondering around the internet in search for recipes. Today I have baked some to our son’s party at creche and decided to type and keep the recipe for the future.

Fluffy Chocolate Cookies
½ cup brown sugar
¼ cup white sugar *
1 tablespoon tapioca flour or cornstarch
1 ½ cup self raising flour
1/4 cup cocoa powder
½ teaspoon baking soda
½ teaspoon salt
2/3 cup sunflower or canola oil
¼ cup rice milk or your favorite vegan milk
2 tablespoon vanilla extract
* I have added this measure of extra brow sugar instead of white sugar today
Preheat oven to 350F (180C). Lightly grease two large baking sheets or use parchment paper.
Combine sugar, oil, rice milk and cornstarch in a mixing bowl using a fork. Mix it very well for about two minutes. Mix in the vanilla.
Add the flour, baking soda, salt, cocoa powder and mix until well incorporated.
Drop tablespoon-sized balls of dough onto the baking sheets without flatting them out. Bake for about 8 minutes, until they are just a little browned around the edges. Let the cookies cool on the baking sheet for about 5 minutes and transfer to a cooling rack.
