A perfect, light entree and yet a complete meal. A combination of whole grains, green vegetables, healthy fats, and protein. Yum!
2 tablespoons grapeseed or olive oil
4-5 cloves garlic, minced
1/2 teaspoon dried rosemary
Red pepper flakes
10 ounces frozen chopped spinach
1 teaspoon salt
2 tablespoons lemon juice
1 can cannellini or Great Northern beans
Pasta, cooked, for 4 servings
Diced Roma tomato and toasted pine nuts, for garnish (optional)
In a non-stick pot or sauce pan, warm the oil over low-medium heat. Add the garlic, rosemary, and pepper flakes (a couple dashes) and let cook for a few minutes until it starts to brown. Add the spinach, salt, and lemon juice. Cover and cook for 5-10 minutes, until the spinach is softened. Stir in the beans and cook until heated through. Serve over the pasta. Top with chopped tomato and pine nuts, if desired.
