Autumn is my favourite time of year.
Some people love the sunny days of summer or the freshness of spring but I love the crispness in the air and the warmth of being wrapped up snuggly on an autumn evening.
Now to make an autumn evening even more amazing, there is a fantastic dessert that uses the crisp fall apples and the warmth of a cake. Seriously, what could be better?!
This apple cake is just perfect because it’s not too heavy and it’s got all the warmth and autumn apples a girl (or guy!) could want. Well I suppose you could add a scoop of vanilla coconut ice cream…. Ok DEFINITELY add a scoop of vanilla coconut ice cream on the top of a big warm slice, it’s an injustice if you don’t!
Make this cake and enjoy it with your loved ones, it’s a perfect ending to any autumn meal and it will certainly have people coming back for more!
Autumn Apple Cake
½ cup non-dairy butter
½ cup of granulated sugar
½ cup unsweetened applesauce
2 tablespoons non-dairy milk
1 ½ cups all-purpose flour
2 ½ teaspoons baking powder
¼ cup dark brown sugar
½ teaspoon cinnamon
½ teaspoon ginger
Preheat oven to 350F.
Lightly grease a 9 inch glass pie dish (you could use metal but I like the crust the glass makes!).
Peel & chop apples of your choice. Set aside.
Make the cake:
Cream the sugar and butter together in a bowl. Add the apple sauce & milk. Lastly add the baking powder and flour. Stir together until just combined.
Put the cake mixture into the glass pie pan and evenly distribute it.
Adding the apples:
Arrange the apple slices in a circle on top of your cake batter. It doesn’t have to look great (especially if you are the only one eating it!) You can make it pretty if you are serving family or friends.
To make the topping, simply mix all the ingredients into a bowl and then sprinkle over the top of your apples.
Bake for 30-40 minutes. If a toothpick comes out clean from the centre you are good to go. Let it cool in the dish for 15 minutes before trying to take it out (trust me on this one).
