Vegan donuts are never too much. These maple glazed ones are perfect for any occasion and a recipe that I always make!
Maple Glazed Fried Donuts
2 packages fast activating yeast
1/2 cup warm water
3/4 cup soy milk
1/3 cup coconut oil (melted)
1/3 cup sugar
1 teaspoon salt
3 1/2 cups unbleached all-purpose flour
Vegan Maple Glaze
2 cups powdered sugar
1 tablespoons soy milk
2 tablespoon maple syrup
Add yeast to warm water (about 110 degrees, like a very warm but not steaming hot bath), mix a little but and gently. Let sit till frothy about 8/10 minutes.
Combine soymilk, coconut oil, sugar, and salt.
Add 1 cup of flour, beat well.
Add enough remaining flour to make a moderately soft dough. Mix well.
Place dough in a well-oiled bowl; turn to oil top. Cover bowl with a dark towel and place in a warm dark area (such as a pantry, oven, cabinet, etc.) for 3 hours.
On lightly floured surface, roll dough out to 1/3 inch thick.
Cut with doughnut cutter or a circle cookie cutter and a soda bottle top. Place on baking sheet and let rise until very light (30-40 minutes).
Heat oil to 375 F in saucepan (use candy/deep-frying thermometer) or in electric deep-fryer with thermostat.
Fry for 2 minutes or ’til browned, turning once.
Drain doughnuts on paper towels and while warm, roll in granulated sugar or cinnamon-sugar mix, powdered sugar, or drizzle with one of the glazes listed below.
