I love making Christmas gifts and this is a perfect present for breakfast lovers.
You will need a nut milk bag to make your almond milk. I got mine from Whole Foods, but you can also buy them online and at other health food stores.
Almond Milk with Winter Spiced Granola
1 cup/ 140g almonds
2 cups/ 180g rolled oats
1/4 cup/ 85g agave
4 tablespoons pumpkin purée
2 tablespoons coconut oil, melted
2 tsp Ginger
2 tsp Cinnamon
dash of salt
Almond Milk Recipe
Soak the almonds for 12 hours in about 3 cups/ 700ml of water.
Drain the water and put the almonds in a blender with 3 cups/ 700ml of fresh water.
Blend for several minutes then strain the mixture using a nut milk bag.
You can add sugar and salt to taste, but I love mine just as it is.
Mix the almond meal and the rest of the ingredients together until combined.
Put on a lined baking tray and bake at 350f/ 180c for 30-35 mins. Give it a mix at 15 mins so it bakes evenly.
You can add some tasty extras once it has cooled. I added 1 cup/ 140g of chocolate chunks to mine. For something a little more festive, how about adding blanched pecans, dried cranberries and/or candied orange peel – get creative!
