One evening my husband and I were watching a movie and had a sweet tooth attack. The problem was, we didn’t have any sweets in the house!
I’m sure you all know that feeling when you go to the cupboards looking for a snack and you have nothing there, it’s like the world is unfairly punishing you for your sweet tooth.
What I had was some baking supplies and frozen bananas in my freezer for the smoothies I have in the morning.
I knew that you could throw frozen bananas in a blender and come up with some sort of sorbet but that wasn’t going to cut it for me, I needed something even more decadent!
I tossed some coconut into a pan to toast, melted a little dark chocolate in the microwave, and then tossed the frozen bananas with some peanut butter and brown rice syrup into my Vitamix. With a little finger crossing and a lot of begging an amazing tasting nice cream came out of it!
This is completely easy, delicious, and endlessly customizable, throw in whatever your heart desires!
Needless to say my husband and I were both curled up back on the couch enjoying our movie with a massive bowl of yumminess!

Peanut butter Banana Toasted Coconut Nice Cream With Chocolate
1/2 cup toasted coconut
1/4 cup melted dark chocolate
3 frozen bananas
1/4 cup brown rice syrup (to taste)
1/2 cup peanut butter (I use crunchy)
Serves 2 heaping bowls.
In a pan over medium heat add a half cup of coconut. You need to keep an eye on the coconut and stir it occasionally to keep it from burning, it can go from golden brown to black in an instant. Once the coconut is toasted take it from the pan and put it into a bowl to cool.
Next, take half a cup of your favorite dark chocolate and melt it in the microwave. Try doing it for 30 second intervals to ensure you don’t burn the chocolate.
Next you want to take three frozen bananas and pop them into a high-powered blender or preferably, a Vitamix. On top of the bananas you’re going to want to put one fourth a cup of brown rice syrup and a half a cup of peanut butter. You can always add a little bit more or less for taste.
If you were using a Vitamix, you’re going to need to use your tamper to keep pushing the frozen bananas and peanut butter mixture down to the blades. If you’re using another high-powered blender you may need to occasionally stop and scrape the sides.
Once everything is completely blended together you should be left with a creamy softserve type of nice cream.
Using a spatula or spoon put the mixture into bowls, sprinkle on your toasted coconut and then add your chocolate! Voila! A delicious, easy and healthy snack!
