So, if you’ve ever read any of my recipes or posts, you know I have a thing for peanut butter and chocolate. I mean who doesn’t have a thing for peanut butter and chocolate? Add in a little toasted coconut and you’ve got heaven, and that’s just what I did here
When I went vegan over six years ago, I missed out on having those very decadent chocolate bars and settled for whatever I could find that was vegan. Little did I know how easy a custom, decadent, mind blowing chocolate bar could be to make!
This chocolate treat can be put together in a snap and within 45 minutes you have an amazing treat everybody’s going to want to eat.
The best thing about this recipe is that it is totally customizable! Don’t like coconut? No problem! Like dried fruit or nuts? Throw it in! The combinations you can make are endless and I highly recommend exploring and finding your favourite.
100g of your favourite dark chocolate
1/2 a cup of natural peanut butter (I prefer crunchy)
1/2 a cup of toasted coconut (I use unsweetened
Find a container that you would like your chocolate to be in the shape of. I use a pie pan because I like to make my chocolate into little triangles but you could use an ice cube tray, muffin tray, etc.
Line the container you’ve chosen with aluminum foil. This will help you remove the chocolate once it’s set. I’ve used plastic wrap as an alternative in this step but I prefer aluminum foil.
Melted the entire chocolate bar in your microwave. Check on it every 20 seconds to make sure it is melting evenly.
Once the chocolate is fully melted add in the half a cup of peanut butter and half of the toasted coconut.
Pour the mixture into the container of your choice. Smooth it out evenly and then take the remaining toasted coconut and sprinkle on top.
Pop your container into the freezer for 30 to 45 minutes. You can then use a big knife to cut the chocolate or if you’ve used a small enough container, you can simply pop them out and eat them!
