With the weather warming up, I wanted to create a great picnic food that reminded me of going to the park, or coming in from the lake and eating lunch on the porch, something along those lines. The one meal that kept coming to mind is tuna salad. Now obviously I didn’t want TUNA, because..well…duh, but I could make something similar using vegan ingredients. What has a similar texture when mashed? Chickpeas!!! I also added some radishes because I’m completely and utterly obsessed with their amazing color. This salad isn’t EXACTLY like tuna, but it sure is delicious. I put this Chickpea Salad on some toasted bread with tomato, avocado, romaine lettuce and YUM. So good. Hopefully this will be a new vegan picnic favorite!
1 15oz can Chickpeas. washed and drained
1/4c finely chopped carrots
1/4c finely chopped celery
3 TBSP chopped green onion
2 small radishes, diced
3 TBSP Vegan Mayo
1 TBSP + 1tsp Sweet Relish
1 TBSP lemon juice
Sprinkle Salt and Pepper for taste
1. In a large bowl, mash your chickpeas with either a fork or potato masher until ALMOST completely smashed up. You want a few pieces left for texture purposes.
2. Add the rest of your ingredients to the bowl and gently fold everything together.
3. Taste for salt and pepper, and adjust as needed
4. Eat on a sandwich or by itself
