“Although many people are still freezing around the globe, some are in the beginning of winter – like us in Brazil – and others just can’t stop thinking about ice cream, no matter the season. This is an easy and delicious ice cream that’s also soy free!” – Andre Vieland, Sao Paulo, Brazil.
Amazing Berries Ice Cream
1 cup hydrated raw cashew nuts
2 cup mixed berries
1 cup water
1/3 cup coconut oil
Juice of 1 lemon
2 cup granulated sugar
1/2 cup molasses
Add the nuts, water and coconut oil to the blender and blend until turn into a cream.
Add all the other ingredients and let it blend for another four minutes and set it aside in a container. Take it to the freezer for about 5 hours.
Return the mixture to the blender and blend it again for another couple minutes.
Repeat the process 2 more times and serve.
