A while ago I decided to adapt an amazing recipe from Super Veggie Mum website and it was sent to our subscribers and now I want to share it with all readers.
It also works well without the vegan cheese and also in many other variations such as” zucchini, leek, basil and tomatoes instead of spinach.
Savoury Spinach and “Cheese” Muffins
2 cups all-purpose flour
1/4 cup nutritional yeast
2 teaspoon baking powder
1/2 teaspoon bakin soda
1/4 teaspoon salt
1 teaspoon garlic powder
1 3/4 cups non-dairy milk (I used oat milk)
1 teaspoon apple cider vinegar
1/4 cup canola or sunflower oil
1 chia egg (1 tablespoon chia seeds combined with 3 tablespoons water)
1 cup fresh chopped spinach
1/2 cup vegan cheddar cheese (I used Violife)
Preheat oven to 350F (or 175C).
Combine dry ingredients in large bowl and mix thoroughly.
In separate bowl, mix wet ingredients together.
Pour wet ingredients into bowl with dry ingredients and stir to combine.
Pour mixture into greased muffin tin, filling ⅔ full.
Bake for 20-25 minutes, until toothpick inserted comes out clean.
