So you’ve just walked in the door after a long day, and all you want to do is eat something warm and delicious but not spend a lot of time in the kitchen.
We’ve all been there and to make matters worse you have a hodgepodge of things in the fridge!
Here is one of my favorite quick recipes (I use that term loosely!) to get you filled up with something warm and curled up on that couch that has been calling your name since you walked in the door.
The “OMG Feed Me” Recipe
4 cups of vegetable broth (Pre-made, bouillon cubes, mushroom powder…the choice is yours!)
Half a pack of vermicelli noodles
3 cups of any veggie you want!
Your favourite protein to pop on top
Once you have 4 cups of boiled broth add the half a pack of vermicelli noodles and cover for 10 minutes on low heat.
While the vermicelli noodles are cooking throw your 3 cups of vegetables into a pan and heat up. Season as desired.
Throw your protein of choice in the oven or on the stove to cook as directed.
When the vermicelli noodles are done, use scissors and cut them into smaller pieces in the pot. This helps everything mixed together so that you don’t get a big blob of noodles.
Toss in your cooked vegetables to the pot with the vermicelli noodles and broth and stir around to mix.
Pour some in a bowl and top with the protein you like best then ENJOY!
This is a very versatile “recipe” so play around with it!
Sometimes I add nutritional yeast to the broth other times I add a splash of soy sauce! I use peas and corn and onions some days and other times I use carrots celery and sweet peppers.
I’ve used lime “chicken” pieces and other times used ground round with taco mix. You could add some tofu or beans, really just use what’s in your kitchen.
So give this a try after a long day and get to some serious relaxing on the couch, you’ve earned it.
