Sometimes I feel as though life is running away without me and that there are not enough hours in the day.
One blink and it’s 8.30am, I’m at my desk at work with a very strong coffee, next and it’s 3pm and I’m on the school run, another and it’s 6pm and I’ve not even thought about what I’m going to do for dinner but we are starving.
On a day like this, which realistically could be any week day, I made the quickest dinner EVER!
It took me all of three minutes from cupboard and fridge to plate.
Mum I’m Starving Chilli and Rice
1 x pack of microwave rice (I used Tesco own basmati)
1 x tin of haricot beans
½ tin of tinned tomatoes
1 x pack of microwave lentils (I used Merchant Gourmet Sundried Tomato and Basil Puy Lentils)
1 x tsp of smoked paprika
1 x dash of hot sauce
1 x avocado, sliced – size of avocado dependant on how much you love avocado!
Tear lentil pack and microwave for 1 minute (dependant on microwave).
Whilst this is cooking rinse the haricot beans and place in a saucepan with the tinned tomatoes, the paprika and hot sauce. Simmer.
Add the lentils to the saucepan and increase heat.
Tear rice pack and microwave for around 1minute 30seconds (dependant on microwave).
Slice avocado into cubes.
Serve the rice and chilli in dishes (cools quicker that bowls for quicker eating).
Top with cubed avocado.
