This dish is typical Sri Lankan lunch with a modern western twist.
The Sri Lankan hospitality is amazing and the food is fiery and authentic. We spend amazing 7 days in this beautiful rural paradise, eating their delicious food and exploring their simple but colourful culture.
Sri Lankan Vegetable Fried Noodles
1 pack of eggless noodles
Choice of vegetables:
Red Onion (fried to make it crispy)
Raw cashew nuts
Wedge of lime to squeeze on top
Oils and spices:
2 tbs Olive oil
3 tbs Sesame oil
4 tbs Soy sauce
4 tbs Garlic oil
Pimch Sweet paprika
Pinch Cumin powder
Boil some water for your noodles. Once boiled , cook the noodles. Once ready put in a bowl of cold water to stop them from sticking.
In a small frying pan heat up some olive oil, chop the red onion and fry until crispy.
In a wok heat up the sesame oil and fry some garlic, add your spices.
Once the flavours are released (about 30 sec) add the chopped vegetables and cashew nuts.
Toss for about 7-10 minutes until soft . Add soy sauce and garlic oil. Then add noodles.
Toss for further 2 minutes until flavours are combined.
For an extra kick serve with chilli paste!
Serve with crispy onion and sprinkle of lime! Enjoy!!
