Breakfast, the most important meal of the day.
However sometimes it’s not always easy to make time for it, especially following a vegan diet often it can be tricky to get creative beyond peanut butter and toast when you’re running out the door half asleep.
Here is a delicious vegan alternative to scrambled eggs! It’s quick, easy and just like the traditional breakfast time favourite.
Vegan Scrambled Eggs
100g firm tofu
Tablespoon of coconut oil
Teaspoon of turmeric
Half a teaspoon of garlic pepper
Pinch of salt
Firstly take your tofu, press down on the tofu using a tofu press (alternatively take two plates place the tofu on one and place pressure on the above plate to remove excess water.)
Set the tofu aside and heat a tablespoon of coconut oil in a pan. (or preferred alternative)
Once the oil has melted begin to crumble tofu pieces into the pan.
As the tofu cooks, stir add your seasoning of garlic pepper, turmeric (to add a yellow colour) and salt.
Leave the tofu on a lowered heat briefly and serve alongside some toast. (garnish with some fresh or dried rosemary.
