This is my first contribution to the All About Vegan Food so I decided that my kick off should be something delicious and full of enzymes. Nowadays everybody is looking for nutrients, but as the enzymes are as important as the nutrients.
The best way of storing enzymes is eating raw food so this super yummy COCOA MOUSSE has avocado as its base instead of processed cream.
You can also use this mousse as filling for pies … hope you enjoy it!
Vegan Raw Cocoa Mousse
Serve 5 portions
1 cup of cocoa powder
1 medium avocado
1 cup of dates
1 cup of molasses or agave syrup
1 tablespoon of natural vanilla extract
1 pinch of whole sea salt
Water until the point of mousse
Hydrate the dates in distilled water for 30 minutes or more.
Mix them in a food processor with the molasses until smooth.
Add a pinch of salt, vanilla and the mashed avocado.
Mix it adding water until getting the consistency of mousse.
Finish adding the cocoa powder.
Transfer it to individual pots, freeze for 10 minutes and is ready to be served. Or leave in the fridge for at least 2 hours before serving.
