Good source of healthy fats and less calories. With no refined sugar its a fantastic treat to be enjoyed by the whole family.
Vegan Avocado Cupcakes
1 ripe avocado
1 tbs of coconut butter or oil
1/2 cup of self raising flour
2 tbs of cacao powder
4 tbs of maple syrup
2 Tbs of coconut butter
1 tbs of maple syrup
1 tbs of cacao powder
chopped hazelnuts to decorate
In a large bowl cream your avocado until smooth, add the coconut butter or oil, mix together , add flour , cacao and maple syrup. Pour into lined cupcake tins. Bake on the middle shelf for 20-25 minutes in 180 degrees.
For the icing :
Blend coconut butter, maple syrup and cacao until smooth.
Spread on cooled cupcakes and sprinkle with chopped hazelnuts.
